Rafael Jimenez-Flores is the J.T. 'Stubby' Parker Endowed Chair in Dairy Foods and Professor in the Department of Food Science and Technology at The Ohio State University's College of Food, Agricultural, and Environmental Sciences. His research focuses on dairy biochemistry, milk fat globule membrane (MFGM) bioactivity, probiotic functionality, and sustainable processing technologies. Current projects include MFGM isolation from acid whey, enzymatic valorization of dairy by-products, and supercritical CO₂ treatments to reduce allergenicity in milk proteins.
He mentors graduate students including Matt Chrusciel, Rolando Choriego Marin, Isha Pradeep Patil, and Celeste Miller. Recent innovations encompass phospholipid extraction methods, probiotic yogurt co-cultures, and FT-IR applications for insect protein analysis. His work bridges fundamental science (e.g., protein adsorption dynamics) and industrial applications (e.g., butter texture modification).
