Patrick Rambourg is a historian, researcher, and teacher specializing in the history of culinary and food practices. He currently serves as an Associate Researcher at the ICT (Identities, Cultures, Territories) Laboratory – Europes in the World, University of Paris Cité (since 2013) and teaches at Sciences Po Lille (since 2022). Previously, he taught at the University of Paris 7 Denis-Diderot (2000-2018) and the University of Angers (2009-2017). He holds a cooking degree (1983) and pursued history studies at the University of Paris 7.
His research explores:
- Historical culinary and food practices
- Representations of the table
- Food trades and gastronomic Paris
- Cultural evolution of French gastronomy
He is a member of the European Institute for the History and Cultures of Food and the Society for the History of Paris and Île-de-France. In 2007-2010, he collaborated with UNESCO experts to inscribe the 'gastronomic meal of the French' as intangible cultural heritage.
