Patricia Combarros Fuertes

Patricia Combarros Fuertes is an Assistant Professor at the University of León, affiliated with the Faculty of Veterinary Science and the Department of Hygiene and Food Technology. Her research focuses on bioactive compounds, antioxidants, and antibacterial mechanisms in food systems.

Her work explores the technological applications of lactic acid bacteria and food safety. She collaborates with research team BALAT (Lactic Bacteria and Technological Application) to advance understanding of natural antimicrobial agents and food preservation methods.
