Nick Sirijovski serves as a Visiting Research Fellow in the Department of Molecular Cell Biology and Pure and Applied Biochemistry at Lund University and Principal Scientist in oat diversity and genomics at Oatly, Sweden, bridging academic research with industrial food science applications.
His research program investigates oat genomics and the three-dimensional architecture of oat seeds, with specialized focus on spatial distribution patterns of nutritionally critical storage molecules including proteins, lipids, carbohydrates, and dietary fibers. This work integrates plant biology, structural imaging, and food technology to advance understanding of oat as a functional food ingredient.
As a LINXS Fellow and active member of Food Working Group 1 within the 'Northern Lights on Food' initiative, he contributes to structural characterization of food raw materials through collaborative projects leveraging advanced imaging and data analysis methodologies for food science innovation.
