Mette Lübeck is a Professor and Vice Department Head for Research at the Department of Chemistry and Bioscience, Faculty of Engineering and Science, Aalborg University, Denmark. She is actively leading multiple research initiatives focused on sustainable biorefinery and food innovation.
Her research interests span biorefinery concepts, protein extraction from biomass, fungal gene technology, enzymes for biomass conversion, and biotechnology including GMO, gene sequencing, and synthetic biology. She also investigates the role of experiments in technology development and technoanthropology.
Her recent publications (2020–2025) highlight a strong trend in sustainable food systems, focusing on protein recovery from grass-clover, alfalfa, and green leaves using membrane filtration and fermentation.
