Matthias Ehrmann is an Adjunct Professor and research associate at the Department of Microbiology at Technical University of Munich (TUM), where he leads the Food Microbiology research group. His work focuses on the taxonomic, physiological and molecular characterization of microorganisms for food fermentation applications and safety.
His research interests include:
- Food Microbiology and safety
- Lactic Acid Bacteria ecology and applications
- Fermentation technology for various food products
- Starter culture development
- Microbial spoilage mechanisms, particularly in beer
- Microbial interactions in food systems
Dr. Ehrmann's laboratory conducts several key projects investigating anaerobic beer spoilage, autolytic enzymes in meat starter cultures, lactic acid bacteria ecology, lupine fermentation, and osmophilic starter cultures. These projects address fundamental microbiological questions while developing practical applications for the food industry.
He serves on the editorial board of Systematic and Applied Microbiology and reviews for numerous prominent microbiology journals including Applied and Environmental Microbiology and Food Microbiology.
His academic journey includes:
- Habilitation (2003) at TUM on "Biotechnology of Lactic Acid Bacteria"
- Ph.D. (1990-1994) at TUM on "Classification and Identification of Lactic Acid Bacteria using molecular methods"
- Diploma in Microbiology, Virology, Biochemistry, Pharmacology (1990)
- Microbiology studies at TUM (1984-1990)
