Ilenys Perez-Diaz is a USDA-ARS Research Microbiologist and Associate Professor in the Department of Food Science at North Carolina State University. Her research focuses on developing microbiology-based technologies to enhance the quality, safety, and value of vegetable products, particularly cucumbers. She investigates microbial diversity in fermented vegetables, spoilage prevention strategies, and the ecological interactions within food fermentation systems.
Education:
- Ph.D. in Microbiology, University of Wisconsin (2005)
- B.S. in Industrial Microbiology, University of Puerto Rico (1998)
Her research interests include optimizing fermentation processes, reducing food waste through low-salt brine systems, and understanding microbial communities' roles in food safety. Key areas of study involve lactic acid bacteria genomics, CO2-mediated spoilage defects, and the application of genomic tools to characterize fermentation microbiota. Her work bridges fundamental microbiology with practical food processing solutions.
Publications highlight her contributions to fermentation microbiology and food safety, with a focus on cucumber fermentation ecology, genome sequencing of spoilage bacteria, and novel preservation methods. She collaborates with USDA-ARS to advance sustainable food production technologies.
