Margrethe Røed

Margrethe Røed is a Research Fellow at the University of Agder's Department of Nutrition and Public Health. She teaches food and health education to primary school teacher candidates at bachelor/master levels and health communication in public health programs. As subject coordinator for food and health, she integrates sustainability and pedagogy into curricula.

Her research spans food education in schools, sustainability in teacher training, and early childhood nutrition. She leads the Nordplus network FENN, fostering Nordic-Baltic collaboration in food education and developed the resource platform Mat til minsten for young children's nutrition.
