Dr. Margaret Murray is an Adjunct Senior Lecturer in the Department of Nutrition, Dietetics & Food at Monash University. She specializes in clinical trials, food system sustainability, and education research. Her work contributes to UN Sustainable Development Goals related to health and sustainability.
Education: PhD in Nutrition (Monash University, 2019), Certificate IV in Leadership and Management (Monash University, 2018), Bachelor of Nutrition and Dietetics (Monash University, 2013).
Research interests include bioactive compounds in food, psychosocial outcomes in weight management, and Indigenous health education. She has developed courses in the Master of Food Science and Agribusiness program, integrating sustainability and health through the Sustainable Nutrition Initiative’s DELTA Model.
Key achievements include the Andrea Joy Logan Prize (2015), MLC-ALUCA-Monash Prize (2015), and contributions to over 30 publications. Her recent work focuses on enzyme inhibition by polyphenols, gut-brain axis interactions, and resistant proteins.
University roles include Early Career Researcher (ECR) representative and Symposium Committee Chair. Collaborative research spans Australia and international partners, emphasizing translational science for public health impact.
