Maja Molnar, PhD, is a Full Professor at the University of Osijek, Faculty of Food Technology and Biotechnology, Department of Food Technology. Her research focuses on green chemistry methodologies, including the development of sustainable extraction techniques (e.g., deep eutectic solvents) for bioactive compounds from agricultural by-products and medicinal plants. She investigates the synthesis and biological activities of heterocyclic compounds, with applications in pharmaceuticals, food technology, and environmental sustainability.
Recent work emphasizes eco-friendly synthesis routes for quinazolinones, coumarins, and triazoles, alongside their antimicrobial, antioxidant, and pharmacological properties. Her studies bridge organic chemistry with industrial applications, addressing challenges in waste valorization and sustainable material production.
Her publications highlight advancements in extraction optimization (e.g., ultrasound-assisted methods), QSAR modeling for drug design, and the structural analysis of bioactive molecules. She actively contributes to conferences like Ružičkini Dani and collaborates on interdisciplinary projects involving food industry by-products.
Consultation hours are Wednesday 10am–12pm at Office 81/18, with additional arrangements by prior agreement. She oversees specialized study programs in Sustainable and Circular Biotechnology, Food Industry Innovations, and Nutrition.
