Saunders serves as an Adjunct Professor of Health Services Administration at State College of Florida's School of Health Services Administration, leveraging over 30 years of public health leadership experience across the United States, Cayman Islands, and Jamaica. Currently functioning as a federal Program Development Consultant, she provides technical assistance to state/territorial public health departments while operating a private nutrition consulting firm in Atlanta.
