Professor MEDENİ MASKAN is a distinguished academic at Gaziantep University, Faculty of Engineering, Department of Food Engineering. With over three decades of academic experience, he has progressed through the ranks from Research Assistant (1990-1998) to Assistant Professor (1998-2001), Associate Professor (2001-2007), and finally to Professor (2007-present). He has served in significant administrative roles including Head of Department (2016-2022, 2021-2024) and Vocational School/College Director (2004-2008).
His educational background includes a Doctorate (1992-1997), Master's degree (1989-1992) in Food Engineering from Gaziantep University, and a Bachelor's degree (1983-1988) from Middle East Technical University's Gaziantep Faculty of Engineering, Food Engineering program.
Professor MASKAN's research focuses on food engineering with particular emphasis on oil extraction technology, drying processes, food preservation, and vegetable oil technology. His work bridges fundamental engineering principles with practical food industry applications, developing innovative methods for oil extraction, food drying, and processing optimization. His research has significant implications for improving food quality, shelf life, and nutritional value while addressing sustainability concerns in food processing.
His recent publications demonstrate a strong focus on green extraction technologies, particularly ultrasound and homogenization-assisted methods for oil extraction. He has made significant contributions to cottonseed oil processing, sunflower oil refining, and mucilage extraction from plant sources. His work spans fundamental research on drying kinetics and food properties to applied research on food product development, including gluten-free products and functional beverages.

Professor MASKAN has supervised numerous graduate students, with 4 doctoral and 16 degree theses completed under his guidance. He has made significant contributions to food engineering education, teaching advanced courses in food dehydration, food operations, and food engineering design.
