MARIA DOLORES RIVERO PEREZ

Dr. Maria Dolores Rivero Perez is a Professor at the Department of Biotechnology and Food Science within the College of Sciences at the University of Burgos. She holds a PhD in Food Technology and leads the research group ALTESA (Alimentos, Tecnología y Salud) focusing on food science and biotechnology.

• Thesis: Antioxidant Profile of Spanish Red Wines

Her research focuses on the intersection of food technology, biotechnology, and health, particularly examining antioxidant properties in food products. Previously affiliated with the TECNOFOOD research group, she contributes to advancements in food science through her work on wine chemistry and nutritional properties.
