Dr. Lucas Krusinski is an Assistant Professor in the Department of Animal & Veterinary Science at the Huntley College of Agriculture, California Polytechnic State University, Pomona. His research focuses on the intersection of agricultural practices, animal welfare, and human health, particularly in regenerative agriculture and food nutrient density. He holds a Ph.D. in Food Science from Michigan State University (2023) and a B.S. in Nutritional Sciences from Morgan State University (2019).
Research Interests: Dr. Krusinski bridges food science, metabolomics, and agroecology to study crop-livestock integrated systems. His work emphasizes enhancing meat nutrient density through sustainable practices, including the use of high-tannin plants and agricultural by-products. He also develops methods to authenticate grass-finished beef, safeguarding consumers and ranchers from food fraud.
