Lucas Krusinski

Dr. Lucas Krusinski is an Assistant Professor in the Department of Animal & Veterinary Science at the Huntley College of Agriculture, California Polytechnic State University, Pomona. His research focuses on the intersection of agricultural practices, animal welfare, and human health, particularly in regenerative agriculture and food nutrient density. He holds a Ph.D. in Food Science from Michigan State University (2023) and a B.S. in Nutritional Sciences from Morgan State University (2019).

Research Interests: Dr. Krusinski bridges food science, metabolomics, and agroecology to study crop-livestock integrated systems. His work emphasizes enhancing meat nutrient density through sustainable practices, including the use of high-tannin plants and agricultural by-products. He also develops methods to authenticate grass-finished beef, safeguarding consumers and ranchers from food fraud.

Teaching: He teaches courses such as Animal Genetics (AVS 3305), Meat Science (AVS 3327), and Biotechnology Applications in Animal Science (AVS 4430). His lab, the Krusinski Lab, specializes in high-throughput multi-omics analyses to measure biomarkers in beef, collaborating closely with ranchers to address industry challenges.
