Dr. Loni Woolley Lucherk serves as Assistant Professor of Animal Science and holds the Gordon W. Davis Endowed Chair in Meat Judging at West Texas A&M University within the Paul Engler College of Agriculture and Natural Sciences and Department of Agricultural Sciences. She joined the faculty in January 2020 after completing her academic training at Texas Tech University.
Her educational background includes a B.S. in Animal Science – Meat Business (2012), M.S. in Animal Science - Meat Science (2014), and Ph.D. in Animal Science - Meat Science (2019), all from Texas Tech University. Her expertise is formally recognized through the prestigious Gordon W. Davis Endowed Chair position.
Dr. Lucherk's research focuses on meat quality and safety, addressing critical food security and industry standards issues. Her work bridges academic research with practical meat industry applications, emphasizing evaluation methodologies and safety protocols across the production chain.
She teaches core courses including Food Science, Meat Animal/Carcass Evaluation, and Advanced Animal/Meat Evaluation while coaching the university's meat judging, meat science quiz bowl, and meat animal evaluation teams. Additionally, she serves as faculty advisor to the Block & Bridle Club, demonstrating comprehensive engagement with student development.
