Kathryn R. Falvo is an Assistant Professor of History in the Department of Liberal Studies at Texas A&M University at Galveston. Her research focuses on food and diet history, exploring how food choices reflect historical, social, and political structures. She emphasizes understanding how power dynamics—political, economic, and cultural—shape human agency and societal change. Falvo teaches courses on U.S. history, aiming to connect past and present to foster engaged citizenship.
