Katherine Harris-Lagoudakis is an Assistant Professor in the Department of Economics at Iowa State University. She holds a Ph.D. and M.A. in Economics from Michigan State University and a B.S. in Economics from the University of Missouri.
Her research focuses on public economics, industrial organization, health economics, and behavioral economics, with an emphasis on analyzing factors influencing grocery demand. Key areas include the impact of federal food policies like SNAP (Supplemental Nutrition Assistance Program), online shopping behaviors, and consumer welfare in response to price transparency and packaging changes.
Her recent work examines how the SNAP benefit cycle affects purchasing patterns, the welfare implications of shrinkflation, and behavioral responses to the pandemic. She also explores how establishment-level data proxies reflect demand dynamics and social interactions.
Katie has been recognized with the 2021 FSN Best Paper Award for her contributions to food policy analysis. Her research bridges theoretical economic models with real-world policy evaluation, offering insights into improving food security and consumer decision-making.
While no advising or grant details are publicly listed, her work consistently addresses applied questions at the intersection of consumer behavior and public policy. She is affiliated with Iowa State's Department of Economics and maintains an active presence in food economics research networks.
