Karoline Aasmul-Olsen is a Postdoc in the Department of Veterinary and Animal Sciences at the University of Copenhagen, specializing in Comparative Pediatrics and Nutrition and Preclinical Disease Biology. She is also part of The Graduate Programme for In Vivo Pharmacology and Experimental Animals.

Her work examines how milk components like osteopontin affect gut maturation, immune system development, and brain function. She has published extensively on infant formula composition, gut metabolism, and the effects of dietary interventions on preterm development. Her research combines nutritional science with pediatric medicine to develop better feeding strategies for vulnerable newborns.
Her recent publications demonstrate strong interdisciplinary work connecting nutrition science with neonatal medicine, microbiology, and neuroscience. The research consistently uses preterm pig models to investigate human infant conditions, with particular focus on gut-brain axis development and immune responses.
