Dr. Karen Barton is a Senior Lecturer in the Department of Built Environment and Life Sciences at Abertay University, where she leads the BSc (Hons) Fitness Nutrition and Health program. A Registered Public Health Nutritionist, her research focuses on food choice, dietary assessment methodology, disease prevention through diet and lifestyle intervention, and food/nutrition policy. She currently conducts secondary analysis of the Living Costs and Food Survey to investigate dietary patterns in Scotland.
Her research interests span public health nutrition, dietary assessment methodologies, and food policy development. Barton's work examines how dietary patterns relate to socioeconomic factors and evaluates progress toward Scottish Dietary Goals.
Barton's publications demonstrate a consistent focus on nutritional epidemiology, dietary assessment methodologies, and public health policy evaluation. Her work frequently employs large-scale survey data to track dietary trends and inform evidence-based policy recommendations.
She is actively involved in policy development as a member of the Scottish Government Cross Party Group on Food and contributes to the scientific community as a peer reviewer for multiple nutrition journals and grant applications for Food Standards Scotland.
