Kanchan Kattel is a PhD Research Fellow in Global Nutrition at the Department of Nutrition and Public Health, Faculty of Health and Sports Sciences, University of Agder, Norway.
Her educational background includes:
- MSc in Environmental Science from Tribhuvan University, Nepal
- BSc in Sustainable Development from the Royal University of Bhutan
Her research spans food security and nutrition, sustainable food systems, dietary assessment, agro-biodiversity, sustainable agriculture, rural development, gender and social inclusion, and environmental justice. She specializes in Himalayan and Bhutanese food systems, currently investigating the Bhutanese food plate through dietary habits, nutrient intake, and public health in cultural contexts via the EATWELL project.
Analysis of her 7 publications (2021-2025) reveals consistent focus on sustainable agricultural practices in Nepal, with increasing emphasis on gender dimensions, dietary diversity, and ethnographic approaches to food systems, particularly in mountainous regions.
Funded through the EATWELL project, she conducts fieldwork in Bhutan and Nepal while contributing to the 'Food and Nutrition in a Life Cycle Perspective' research group. As a doctoral candidate, she is not currently supervising students but actively participates in collaborative research activities.
