Joshua Schlachet is an Assistant Professor at the University of Arizona's Department of East Asian Languages and Cultures. His research focuses on early modern and modern Japan, particularly the cultural history of food and nourishment in the 18th and 19th centuries. He is the co-editor of *Interdisciplinary Edo: Towards an Integrated Approach to Early Modern Japan* (Routledge, 2024) and currently works on his book project *Nourishing Life: Cultures of Diet in Early Modern Japan*, examining dietary knowledge and its societal implications.
His teaching includes courses on Japanese/East Asian history, dietary cultures, material culture, and everyday life. Schlachet holds a Ph.D. in East Asian Languages and Cultures from Columbia University, alongside degrees from Cornell University (History), the University of Michigan (Japanese Studies), and the Culinary Institute of America (Culinary Arts).
His research spans global food studies, histories of science/health, material culture, and Dutch-Japanese exchanges. He contributes to journals like *Asian Medicine*, *Verge*, and *Monumenta Nipponica*.
