Jenny Paxman is a Principal Lecturer in Nutrition and Subject Group Leader for Food and Nutrition at Sheffield Hallam University. A Registered Nutritionist, she researches appetite regulation, weight management, and functional foods.
She chaired the 2022 Nutrition Society Summer Conference and leads research on plant-based meat alternatives and health claims regulation. Her pedagogy includes the Nutrition Fair, an innovative 16-year student assessment project. Current doctoral supervision explores plant-based foods and food accessibility.
