Jeffrey Pilcher is a Professor in the Department of Historical and Cultural Studies at the University of Toronto Scarborough (UTSC). He is a renowned scholar in food history, with a particular focus on Latin America and Caribbean studies. His research explores intersections between food, identity, and globalization, and he teaches courses on food and drink history, Mexico, Latin America, and Caribbean pirates.

Pilcher's research spans food history from local to global scales, examining how culinary traditions evolve through cultural exchange. His current project investigates the world history of beer, tracing European lager's spread through trade, migration, and colonial networks.
Key publications include Planet Taco: A Global History of Mexican Food (2012), which analyzes authenticity in Mexican cuisine, and the Oxford Handbook of Food History (2012). He also serves as articles editor for Global Food History and edited the four-volume anthology Food History: Critical and Primary Sources (2014).
