Jean-Marc Fullsack is a full-time Lecturer in the Department of Hospitality Management at the University of San Francisco’s School of Management. With a background in classical French cuisine from the Ecole Hôtelière de Strasbourg (1972), he has held prominent roles as an Executive Chef in high-profile settings, including the White House, Air Force One, and Walter Reed Medical Center. He collaborated with Dr. Dean Ornish on seminal books addressing healthy cooking and heart disease prevention.
