Jau-Jiin Chen is a Professor in the Nutrition & Dietetics program under the Department of Family and Consumer Sciences at Lamar University, affiliated with the College of Education and Human Development. She earned her Ph.D. in Food and Nutrition at Texas Tech University, preceded by postdoctoral research in Cell Biology and Biochemistry. A registered dietitian nutritionist since 2002, she has taught at Texas Tech University, University of Nevada Las Vegas, and Lamar University since 2009.

Dr. Chen’s research spans plant-based diets, functional foods, complementary/alternative medicine, and micronutrient metabolism. Her work on selenium compounds in cancer cells and flavonoids in steroidogenesis demonstrates interdisciplinary expertise in biochemical and clinical nutrition. She has contributed to dietary reference intake studies and chronic disease prevention research.
Her recent publications focus on nutrition education pedagogy, chronic disease risk assessment in college populations, and selenium’s biochemical effects. Awards include multiple scholarships from Texas Tech University and the Graduate School Summer Research Fellowship. She serves on editorial boards, mentors professional communities, and participates in university committees.
