Gilles de Revel is a university professor and deputy director responsible for training at the Institute of Vine and Wine Sciences (ISVV) at the University of Bordeaux. He is one of France's leading specialists in oenology, with a focus on the composition, chemical and sensory analysis, and tasting of wines and spirits.
