Dr. Eunjoo Kim is a Postdoctoral Research Fellow in Poultry Nutrition at the School of Environmental and Rural Science, University of New England. Her research focuses on nutritional strategies to enhance feed efficiency in poultry, particularly through carbohydrate-degrading enzymes and functional oligosaccharides. She holds a PhD in Poultry Nutrition from UNE and advanced degrees in Animal Science and Biotechnology from Chungnam National University, South Korea.
Dr. Kim's work emphasizes improving broiler chicken gut health and nutrient utilization, with recent studies exploring the dynamics of fiber digestion and in situ oligosaccharide production. She has co-authored over 24 peer-reviewed journal articles and 30 conference papers. Her current projects aim to optimize poultry feed formulations and address subclinical enteritis challenges. Dr. Kim co-supervises two PhD candidates and collaborates with institutions like the Poultry Hub Australia.
Key research interests include enzyme supplementation, gut microbiota modulation, and sustainable feed practices. Her interdisciplinary approach bridges animal nutrition with biotechnology, addressing both agricultural productivity and environmental sustainability.
