Erin Campbell

Dr. Erin Campbell is an Assistant Professor of Clinical Public Health Sciences (Part-Time) at the University of Rochester Medical Center. She is Co-Director of the UR Medicine Nutrition in Medicine Research Center, focusing on dietary interventions for chronic diseases. Her work emphasizes plant-based nutrition as a therapeutic tool in conditions like cancer, diabetes, and kidney disease. She holds an MD from SUNY Buffalo and an MPH, and is board-certified in Preventive Medicine and Lifestyle Medicine.

Research interests include clinical trials evaluating plant-based diets' impact on biomarkers, patient outcomes, and cost-effectiveness. The Research Center collaborates with departments like Cardiology and Oncology, and institutions such as Johns Hopkins. Ongoing projects involve dietary trials funded by the Highland Hospital Foundation, exploring plant-based diets in breast cancer, vascular health, and diabetes management.

Dr. Campbell has been recognized with the Delta Omega Public Health Honor Society. Her lab provides prepared meals for clinical trials and offers plant-based meal programs to the public, with proceeds supporting research. She co-authored studies on dietary patterns' effects on blood pressure, insulin requirements, and nutrient intake in cancer patients.
