Eric Mousel is an Assistant Professor and Beef Systems Management Specialist at the University of Minnesota's Department of Animal Science. He is based at the UMN Extension Regional Office in Grand Rapids, MN. His work focuses on beef cattle management, grazing systems optimization, and agricultural extension programs.

Research interests include beef cattle nutrition, landscape reclamation through grazing, and improving grazing land productivity. He leads statewide initiatives such as Cow Calf Days, the Minnesota Grazing School, and the Fall Beef Roundup. Mousel operates a Red Angus seedstock farm near Jacobson, MN, and is actively involved in industry associations including the Minnesota State Cattlemen’s Association and the Midwest Forage Association.
Publications span research, extension materials, and industry reports. He contributes to Beef Team TV, providing educational content for agricultural stakeholders.
