Diane Papillion

Diane Papillion is an Associate Professor of Instruction and serves as the Director of the Didactic Program in Dietetics (DPD) in the Department of Nutritional Sciences at the University of Texas at Austin. She has been affiliated with the university since 2012, contributing to both academic and practical training in dietetics.

• Founded expertise in management of community-based feeding programs and sustainable food systems
• Teaches Foodservice Systems Management (NTR 334/234L), Standards/Ethics/Credentialing in Dietetics (NTR 162)
• Supervises Community Nutrition and Food Service Management practicums (NTRM 372C and NTR 374)

Her research focuses span nutrition, obesity prevention, behavioral and community nutrition, and sustainable food systems. While her work primarily emphasizes applied training and program leadership, these thematic areas underpin her educational and mentorship activities.

As a Registered Dietitian, she plays a pivotal role in shaping the Integrated Coordinated Program in Dietetics through both classroom instruction and hands-on practicum supervision.
