Dr Cristian Varela is a Lecturer at the University of Adelaide's School of Agriculture, Food and Wine, part of the Faculty of Sciences, Engineering and Technology. He holds a visiting scientist role at the Donnelly Centre for Cellular and Biomolecular Research (University of Toronto). His research focuses on microbiology, bioprocess engineering, and fermentation technologies, with recent expansions into coffee, cacao, brewing, and kombucha production. Dr. Varela is affiliated with Wine Innovation Central and the Waite campus.
He has 20 years of academic and industry experience across Australia, Chile, South Africa, France, and Canada. His work includes developing reduced-alcohol wines using novel yeast strains, evaluating environmental impacts on yeast metabolism, and applying systems biology approaches to fermentation processes. He coordinates workshops for the Australian wine industry and serves on editorial boards for Applied and Environmental Microbiology, International Journal of Food Microbiology, and Food Microbiology.
Research highlights include characterizing indigenous Australian yeasts for food applications and investigating microbial communities in traditional beverages like way-a-linah. His current projects include a collaborative study on coffee fermentation microbiology. Dr. Varela is an Endeavour Award Fellow (2015) and has been featured in media outlets like Scientific American and Wine Spectator.
