Claire Gaudichon is a Professor in Human Nutrition at Université Paris-Saclay and Director of the Physiologie de la nutrition et du comportement alimentaire (Nutritional Physiology and Eating Behaviour) laboratory (PNCA), affiliated with Université Paris-Saclay, AgroParisTech, and INRAE. She focuses on protein digestion, protein-energy metabolism, and sustainable nutrition, particularly plant-based protein quality, using stable isotope biomarkers and intestinal probe sampling. Her work spans three decades, including methodological innovations for non-invasive isotopic analysis of amino acid digestibility.
Research Interests: Her research explores how dietary protein intake affects human health, metabolic adaptations, and satiety. She investigates sustainable nutrition transitions, comparing plant and animal protein sources, and develops less invasive isotopic analysis techniques for vulnerable populations like bariatric surgery patients.
Methodological Innovations: PNCA laboratory, under her leadership, pioneered isotopic analysis of carbon-13, deuterium, and nitrogen-15 in amino acids while maintaining traditional ileal probe methods. This dual expertise enables validation of less invasive techniques for broader applications.
