Professor Charles Brennan serves as the Chief Scientific Director of the Food & Nutrition Innovation Hub at RMIT University's STEM College in Australia. His research focuses on Food Sciences with emphasis on functional foods, starch digestion, and bioactive compounds.
Recent research outputs include 15 publications spanning topics like space nutrition, antimicrobial packaging, and bioactive mushroom compounds. His work explores applications of starch-phenolic complexation for glycemic control, fermented vegetable products with Australian ingredients, and elderly formula foods.
