Chaoyu Zhai is an Assistant Professor in the Department of Animal Sciences at the University of Connecticut. He joined the university in Fall 2022 as part of the College of Agriculture, Health and Natural Resources (CAHNR) faculty cohort.

- MS in Agricultural Product Processing & Storage Engineering, Shandong Agricultural University (2018)
- BS in Food Science & Engineering, Shandong Agricultural University (2015)
His research focuses on meat quality characterization through proteomic and metabolomic approaches combined with machine learning algorithms. Key areas include:
- Protein-metabolite interactions in postmortem skeletal muscle
- Machine learning for biochemical event identification in meat quality development
- Protein lipoxidation mapping
- AI-based analysis of protein functionality changes
- Mitochondrial dynamics affecting meat quality
Dr. Zhai teaches ANSC 4343/5643 (Muscle Biology and Muscle Food Chemistry) and maintains an active research lab in George White Building, Room 214.
