Bruce Mattel

Bruce Mattel is an Associate Professor of Culinary Arts at the Culinary Institute of America (CIA). He currently oversees curriculum, instruction, and food quality in CIA's public restaurants and teaching kitchens, covering High-Volume Production, Wine Studies, and Beverage Operations.
