Barbara Fielding is an Associate Professor in Nutritional Sciences at the University of Surrey, affiliated with the School of Biosciences within the Faculty of Health and Medical Sciences. She holds a part-time role, working one day per week. Her research focuses on human fatty acid metabolism in obesity, type 2 diabetes, and dietary influences. In 2010, she received the Cuthbertson Medal for her work in human nutrition and metabolism.
Her research explores how fatty acid metabolism is impaired in metabolic disorders and uses biomarkers to assess intake and health outcomes. Collaborations, such as with Graham Burdge at the University of Southampton, investigate polyunsaturated fatty acid synthesis and immune function in aging. She teaches on courses including Food Science and Nutrition BSc (Hons), Nutrition BSc (Hons), and Nutrition and Dietetics BSc (Hons).
