Annelot Nijkoops

Annelot Nijkoops is a Postdoctoral Researcher and Research Assistant at the Faculty of Science and Technology, Free University of Bozen-Bolzano (UNIBZ), Italy. She holds an M.Sc. in Food Technology (Wageningen University, Netherlands) and is completing her Ph.D. in Food Engineering and Biotechnology at UNIBZ. Her research focuses on designing electronics from nature-derived materials, particularly in nanotechnology-driven sensors for biomedical and environmental applications. She has conducted collaborative research at Surrey University (UK) on bio-pigments for artificial retinas.

Key areas of expertise include carbon nanotube-based sensors, flexible electronics, and additive manufacturing techniques. Her work addresses challenges in ammonia gas sensing, temperature monitoring, and sensor integration into medical devices. She has contributed to advancements in 3D-printed antennas and auxetic structures for pressure sensors.

Publications highlight innovations in flexible sensor fabrication, chemiresistive sensing mechanisms, and biomedical applications of nanomaterials. Her interdisciplinary research bridges materials science, engineering, and healthcare, with applications ranging from aerospace to wearable medical technologies.
