Alfonso Prado-Cabrero

Dr. Alfonso Prado-Cabrero is a Research Fellow at the Nutrition Research Centre Ireland (NRCI) in the Department of Computing and Mathematics at South East Technological University. He holds a PhD in Molecular and Cellular Biology from the University of Seville (2006) and a BSc in Biochemistry from the University of Navarra (1999). His career includes postdoctoral research at Spain's Hospital Universitario de la Princesa and the Institute of Biomedical Research Alberto Sols, followed by work on carotenoid biosynthesis at KAUST (Saudi Arabia).

His current research focuses on sustainable food innovation, including macular carotenoid-enriched yogurt development and land-based zooplankton mass production. He has expertise in molecular genetics, environmental impact analysis, and nutraceuticals. His work addresses UN Sustainable Development Goals related to sustainable agriculture and environmental protection.

Key professional milestones include a 2005 EMBO grant for research in Germany, a 2009 Juan de la Cierva Fellowship, and consultancy roles (2019–2022). Notable contributions include pioneering studies on Fusarium carotenogenesis and the environmental impacts of omega-3 extraction.
