Adeline Lau is an Associate Lecturer in the Department of Nutrition and Dietetics within the College of Nursing and Health Sciences at Flinders University, where she also earned her Bachelor of Nutrition and Dietetics (Honours). She teaches multiple courses in nutrition, dietetics, and ageing, including Clinical Nutrition and Dietetics, Communication and Nutritional Counselling, and Nutrition and the Ageing Population. She is currently pursuing her PhD at Flinders University, focusing on consumer-informed nutrition education for frailty in older adults.

Adeline is an Accredited Practising Dietitian (APD) and Accredited Nutritionist (AN) with over eight years of clinical experience in public hospitals, community settings, residential care, and outpatient clinics across Singapore and Australia. Her research interests include gerontological nutrition, plant-based diets, frailty, and enhancing the mealtime experience for older adults. She emphasizes consumer engagement and participatory research in developing nutrition resources tailored to older adults and their caregivers.
Her two key publications span topics from fatty acid metabolism to consumer-centered nutrition education. The 2025 scoping review highlights her focus on co-designing educational materials with older adults and caregivers, indicating a strong commitment to accessible, evidence-based nutrition communication. Both publications reflect her interdisciplinary approach, combining clinical dietetics with gerontology and public health.

Adeline is actively involved in teaching and research, contributing to both undergraduate and postgraduate programs.
