Dr. Chamila Nimalaratne is a Lecturer in the Department of Food and Human Nutritional Sciences at the Faculty of Agricultural and Food Sciences, University of Manitoba, Canada. Her work focuses on food chemistry, antioxidant properties, and plant protein extraction technologies. PhD in Food Science & Technology from the University of Alberta MSc in Food Science & Technology from the University of Peradeniya, Sri Lanka BSc in Agriculture from the University of Peradeniya, Sri Lanka Her research explores antioxidant mechanisms in food systems, particularly in eggs and plant proteins, and emphasizes sustainable extraction methods. She has contributed to studies on carotenoid stability, bioactive peptides, and water safety in food processing. Recent publications highlight advancements in plant protein isolation using deep eutectic solvents, seasonal variations in maple syrup composition, and antioxidant dynamics in eggs under processing and digestion. She teaches courses such as Food Analysis and Current Issues in Food and Human Nutrition.
