Sarah Achelpohl Harris

Sarah Achelpohl Harris is a Lecturer in the Department of Human Sciences at Middle Tennessee State University (MTSU), specializing in Nutrition and Food Science. She joined MTSU as a full-time instructor in Spring 2021. Her education includes a BS in Nutrition and Food Science (2010) and an anticipated PhD in Nutrition (2025), both from MTSU, along with an M.S. in Clinical Nutrition (2011) from the University of Memphis. She is a Tennessee-licensed Registered Dietitian with expertise spanning lactation, gerontology, and food security.

Research & Teaching: Her research focuses on pedagogy in online teaching and college food insecurity. She teaches courses such as Nutrition for Nursing, Sports Nutrition, and Nutrition in Aging.
