Dr. Monica Giusti is a Professor and Associate Chair in the Department of Food Science and Technology at The Ohio State University's College of Food, Agricultural, and Environmental Sciences. She holds visiting faculty status at Universidad Nacional Agraria in Peru and leads the Giusti Phytochemicals Laboratory. Her research focuses on natural pigments, particularly anthocyanins, for applications in functional foods and natural colorants.
