Minu Sara Thomas

Dr. Minu Sara Thomas is an Assistant Professor in the Nutrition and Dietetics Program at Western Carolina University’s School of Health Sciences. She holds a Ph.D. in Nutritional Sciences from the University of Connecticut (2022), alongside multiple master’s degrees and a bachelor’s degree in Biochemistry. Her roles include curriculum development, academic advising for DPD students, and teaching courses such as Nutritional Biochemistry and Advanced Medical Nutrition Therapy.

Dr. Thomas earned her Ph.D. from the University of Connecticut (2022), followed by a Master’s degree in Medical Biochemistry from Amrita Institute of Medical Sciences (India) and a Bachelor’s in Biochemistry from Madurai Kamaraj University.
