Michael Bom Frøst is an Associate Professor in Food Sensory Innovation at the University of Copenhagen's Department of Food Science, a position he has held since 2007. His research focuses on understanding human-food interactions through Food Design Thinking, examining sensory, functional, and reflective dimensions of food experiences. Previously, he directed the Nordic Food Lab (2012-2018) and served as Director of Studies for the MSc in Gastronomy and Health.
His research examines novel food acceptance including insects, plant-based proteins, and fermented foods to promote sustainable diets. Recent work analyzes consumer behavior barriers, sensory evaluation methods, and strategies for transitioning to sustainable food systems. Publications consistently explore sensory drivers of food choices and sustainability communication.
Frøst has received multiple awards including the Rolling Stones Culture List (2017) and twice received Best Course awards at his department (2013, 2015). He has supervised 7 PhD students to completion and 37 MSc students, currently advising 1 PhD candidate. His educational initiatives include developing the MSc Food Innovation and Health curriculum and courses on gastronomic design.
