Dr Jacinta Watkins is a Research Fellow in Plant Molecular Biology at the School of Biology & Environmental Science, Queensland University of Technology. She holds a PhD and BSc from the Australian National University. Her research focuses on enhancing banana fruit quality and resistance to Fusarium wilt TR4 using genetic engineering and CRISPR technologies, building on prior work in carotenoid esterification (ANU) and medicinal plant alkaloid biosynthesis (University of Calgary).
- Education:
- PhD in Plant Sciences, Australian National University (2019)
- Bachelor of Science, Australian National University
Her interdisciplinary research spans plant genetics, biochemistry, and biotechnology, with applications in agriculture and pharmaceuticals. Recent studies include elucidating mescaline biosynthesis in peyote and improving carotenoid retention in crops. She collaborates in QUT's banana biotechnology program led by Professor James Dale.
Publications highlight contributions to understanding plant pigment metabolism, alkaloid pathways, and compartmentalized metabolic processes. Supervision opportunities are available in areas like anthocyanin biofortification and banana functional genomics.
