Dr. Erica Cook is an Associate Professor and Director of the Research Centre for Applied Psychology at the University of Bedfordshire. A Chartered Health Psychologist and Fellow of the Royal Society of Public Health, she coordinates the MSc Health Psychology programme and serves as Senior Methodologist for the NIHR Specialist Centre for Public Health Service.
Her research addresses healthcare access disparities, technology adoption in health, and public health interventions for underserved populations. Current projects include evaluations of medication adherence systems and community-based palliative care initiatives. She has led multiple funded studies including BLMK ICS projects on primary care access (£175K) and Keech End-of-Life Research Network (£108K).
She teaches health psychology modules and supervises doctoral candidates investigating topics from physical activity interventions to bereavement counselling access. Her publications focus on culturally responsive healthcare and community co-production methodologies.
