About
Dietmar Krautwurst is a Professor at the Leibniz-Institute for Food Systems Biology at the Technical University of Munich. His research focuses on chemosensory receptors, particularly odorant receptors (ORs), and their roles in food-related olfaction, immune cell function, and postprandial physiology.
- Head of Research Group Taste & Odor Systems Reception
- Project leader for S1 genetic engineering and Nagoya Protocol compliance
Research Highlights:
- Elucidated odorant coding via broadly/narrowly tuned ORs
- Discovered ORs as markers for leukocyte subpopulations
- Developed cell-free, receptor-based odorant detection systems
Publications & Technology: His recent work involves molecular modeling of ORs, copper-binding motifs in OR2M3, and biotechnological applications of foodborne odorant signaling. Articles span GPCR activation mechanisms, food aroma analysis, and immune system interactions.
Teaching: Lectures on Chemoreception, signaling, and cellular function at TUM, with seminars on PCR technology.
