Barbara Simonato

Barbara Simonato is an Associate Professor in the Department of Biotechnology at the University of Verona, specializing in Food Science and Technology (AGRI-07/A academic sector). Professor Simonato's research focuses on Food Biochemistry with particular emphasis on extraction, purification and characterization of food proteins. She conducts significant research on digestibility and allergenicity of cereal-based foodstuffs and identification of hidden allergens in foods. Her expertise extends to wine technology and food processing methods, as evidenced by her numerous research projects in viticulture and enology. Her work falls under the broader categories of Food Biotechnology and Bioengineering (LS9_5) and Food Sciences including food technology and nutrition.

She serves on several important academic committees including the Faculty Board of PhD in Smart Agrifood Sciences, the Biotechnology Teaching Committee, and the Innovation and Sustainability in the Industrial Production of Food Teaching Committee.
