Arif Bilgin

Arif Bilgin is a Professor in the Department of History at Sakarya University's Faculty of Humanities and Social Sciences. His research specializes in Ottoman socio-economic history, with particular focus on culinary traditions, institutional transformations, and material culture.

His investigations span Ottoman palace cuisine, trade networks, and the evolution of food practices from the 15th to 19th centuries. He has led research projects on Ottoman modernization and co-authored the comprehensive reference 'Turkish Cuisine' under the Ministry of Culture.

Recognitions include the Banking and Finance History Research Competition Award and Gourmand World Cookbook Award for contributions to culinary historiography.
