Amy Moore

Amy Moore is an Associate Professor in Nutrition at the Department of Nutrition and Dietetics, Southeast Missouri State University, within the School of Allied Health, Kinesiology, & Sport Sciences. She holds a PhD in Curriculum and Instruction, along with a Master of Medical Dietetics and Master of Public Health from Saint Louis University, and a Bachelor of Science in Dietetics from Southeast Missouri State University.

Her teaching philosophy emphasizes service learning, bridging academic knowledge with community engagement. She believes in understanding barriers to good nutrition to foster empathy in future professionals. Her research focuses on community nutrition, public health, and behavioral nutrition, particularly through initiatives like the Power of Produce program targeting children's eating behaviors via farmers' market incentives.

Professional highlights include presenting at the Academy of Nutrition and Dietetics Conference, and receiving the Missouri Dietetic Association Recognized Young Dietitian of the Year award. She is actively involved with the Academy of Nutrition and Dietetics.
